Lemon Lavender Tart with Fresh Berries and Whipped Cream

Ingredients
1 Pre-baked 9-inch pastry crust
6 Eggs, large
1/2 C Granulated sugar
1/2 C Calicutts Lemon Lavender Sugar
3/4 C Fresh lemon juice
1/2 C Unsalted butter, cut into pieces
Directions
Blind bake your pastry crust according to your recipe or package directions. Set aside to cool.
In a heatproof bowl, whisk together eggs, granulated sugar, and Calicutts Lemon Lavender Sugar. Add lemon juice and whisk to combine.
Place the bowl over a pot of simmering water (double boiler), making sure the bottom of the bowl doesn't touch the water. Cook, whisking constantly, until the mixture thickens enough to coat the back of a spoon, about 10-15 minutes.
Remove from heat and whisk in butter, a few pieces at a time, until fully incorporated.
Strain the curd through a fine-mesh sieve to remove any bits of cooked egg.
Pour the strained curd into the pre-baked tart shell. Refrigerate for at least 4 hours, or until fully set.
Before serving, arrange fresh berries on top and serve with a dollop of freshly whipped cream. Enjoy!
