Earl Grey Tiramisu with Lemon Lavender Sugar

Ingredients
For the Earl Grey Syrup:
2 C Earl Grey tea (made with 4 tea bags)
1/3 C Granulated sugar
2 Tbsp Cognac (optional)
Mascarpone Filling:
16 oz Mascarpone cheese, room temperature
4 Egg yolks
3 Tbsp Granulated sugar
1 C Heavy cream
1 tsp Vanilla extract
3 Tbsp Calicutts Lemon Lavender Sugar
Assembly:
30-36 Ladyfinger cookies
Calicutts Lemon Lavender Sugar OR Lavender and Lemon Zest, for garnish
Directions
Make Earl Grey Syrup:
Brew tea extra strong by steeping 4 tea bags in 2 cups of boiling water for 5-7 minutes.
While tea is still hot, stir in sugar until completely dissolved. Allow to cool completely, then stir in Cognac if using.
Prepare Mascarpone Filling:
In a large bowl, whisk egg yolks and granulated sugar until pale and thick, about 3-4 minutes. Gently fold in the mascarpone cheese until smooth.
In a separate bowl, whip heavy cream with vanilla until soft peaks form.
Fold whipped cream into the mascarpone mixture, then gently fold in the Calicutts Lemon Lavender Sugar.
Assemble Tiramisu:
Quickly dip each ladyfinger into the Earl Grey syrup (just a second on each side—they should not be soggy).
Arrange a layer of dipped ladyfingers in the bottom of a 9x13-inch dish.
Spread half of the mascarpone mixture evenly over the ladyfingers.
Create a second layer of dipped ladyfingers. Top with remaining mascarpone mixture.
Dust the surface with additional Calicutts Lemon Lavender Sugar. Cover and refrigerate for at least 6 hours or overnight.
To serve, garnish with a sprinkle of Lemon Lavender Sugar or culinary lavender and fresh lemon zest. Cut into squares and serve chilled.
