With the end of summer drawing near, we are taking advantage of what remains of the summer fruit harvest to fill our kiddos lunch boxes with nature's candy. Also perfect for a picnic or brunch, this recipe is full of strawberries, blueberries, blackberries, pineapple, mango, Calicutts Vanilla Bean Sugar, and fresh mint. It is also perfect for quick breakfast parfaits for on-the-go mornings.
Vanilla Bean Sugar Fruit Salad

Ingredients
5 C Mixed berries, fresh (strawberries, blueberries, raspberries, blackberries)
1½ C Pineapple, fresh
1C Mango, fresh
1 tsp Honey
1 tsp Calicutts Vanilla Bean Sugar
1 Lime, juiced
2 Tbsp Coconut oil, melted and cooled
6 Mint leaves
Directions
Wash the mint leaves and pat them dry. Stack them up together one on top of the other and roll tightly. Thinly slice to make mint juliennes.
Whisk Vanilla Bean Sugar, coconut oil, honey, and lime juice. When well blended, mix the mint into the mixture to make a dressing.
In a large bowl add all of the fresh fruit and mix until well blended, being careful not to damage the berries.
Drizzle the salad with the dressing, toss, and serve!
