Spring Pea Soup with Crème Fraîche

Ingredients
4 C Fresh peas
2 Leeks, white parts only, cleaned and chopped
4 C Chicken stock
1/2 C Fresh mint leaves
1/2 C Crème fraîche
2 Tbsp Butter
½ Tbsp Calicutts Salt & Pepper Blend, to taste
1 Tbsp Calicutts Goddess Blend
Directions
In a medium pot, melt butter over medium heat and sauté leeks until soft and translucent, about 5 minutes.
Add peas and chicken stock, bring to a simmer, and cook for 10 minutes until peas are tender. Add mint leaves, Salt & Pepper, and Goddess Blend. Remove from heat.
Using an immersion blender or standard blender, purée the soup until completely smooth. Strain through a fine-mesh sieve for an extra silky texture.
Serve warm or chilled, topped with a dollop of crème fraîche. Enjoy!
